Winged Bean Curry



1. Heat oil, add mustard seed and stir until these "pop".

2. Add onion and ginger and continue to stir, frying over low heat. Add haldi, masala and chilli, stir fry for a minute.

3. Put the beans into pan ann stir fry for 2-3 minutes.

4. Add coconut cream and cook uncovered, stirring several times for 5 minutes.

5. Serve at once with rice or roti.

Note: Do not prepare beans too long before cooking as they change colour.
