Chicken liver with tomatoes



1. Wash and dry liver.

2. Chop into small pieces.

3. Saute onion in hot oil until transparent.

4. Fry liver until sides are all sealed.

5. Add tomatoes, salt and pepper.

6. Simmer for 15 minutes unitl sauce is thick and liver is cooked.

7. Serve on hot buttered toast, with roti or sandwiches.
