Outrigger on the Lagoon Fijis executive sous chef, Shailesh Naidu, has won a silver medal at the Food Hotel Asia 2006 Culinary Challenge held in Singapore.

The challenge which was held last month was in the Live Cooking Individual Challenge Field and Forest category.

Competing against 44 other world competitors from places such as United Arab Emirates, Taiwan, Singapore, Malaysia, Japan, China, India and others, Naidu, a previous Fiji Chef of the Year (2004), again displayed his exceptional culinary talents on an international stage.

The biennial competition is the biggest and most prestigious in Asia with international judges from Germany, Switzerland, New Zealand, South Africa and the USA.

Due to its prestigious reputation, the competition is a closed event. Competitors must be selected to participate.

Naidu was invited to compete after his remarkable gold medal win at the Oceanafest 2005 Culinary Challenge in Western Australia.

Within a one-hour time limit competitors were asked to prepare four plates of the one dish.

The judging focussed on technique, degree of difficulty, the use and blend of spices and ingredients, presentation and general impression, preparation time, safety and hygiene and confidence.

With many culinary awards under his chef hat, Naidu said the judging in this competition had been the toughest he had ever experienced.

Nut and spice encrusted beef tenderloin resting on a slice of baked pumpkin with baby potatoes, marinated mushrooms and arugula topped with red onion confit, goat feta and an olive and orange vinaigrette and aged balsamic dressing.

Outrigger on the Lagoon Fiji is an officially rated five star resort located on the Coral Coast.
